Guys I am tired of footie and small Kenyan Politics so wacha nipike kidogo…join me if you can. Bring your maize, beans as your main recipes(dry or soft), potatoes, carrots, cabbage, onion, spices/cubes, avocado, cooking oil, salt…
So here we go… I will work with soft maize and beans today…so half an hr of speed boiling them and leaving them to cool on the side. If working with hard maize and beans, I soak them overnight. Then boil the next day for 1 hr.
1.Put some oil and onion on the frying pan at v low heat, keep stirring (hauendi mahali).kikikiki
2.Put in the potatoes which you had chopped earlier…pour in some little water and keep stirring.
3.Remember, you have some maize and beans on the side…pour them in and keep stirring gently…
4.A little bit of water, okiya is not welcome oki?guuud and a bit of the spices you have, maggi cubes, roiko, whatever…keep the heat v low…
5. Keep stirring.
6. In a few mins put in the finely chopped carrots. We don’t like soggy carrots bila vitamins and also to keep them crunchy.
7. Finally some tomato puree bought or home made. Tomatoes Tomatoes I cannot live without them. I either put them in the blender or serve them raw on the side. But in this case put them in as the juices kinda marry.
8. In 30 mins the meal is ready BUT where are the side dishes? here we go…
9. I normally prep my kachumbari as the githeri cooks. My ingredients are…tomato, pilipili, chilli, dania or anything that tickles your fancy. Some of my friends have steamed cabbage ready or avocado…up to you. Pls do not over cook the cabbage or the greens available to you.
10. Beef stew. Simply nyama cooked for a while until tender but keep it dry as remember the githeri aka murram has some gravy in it, then serve…
11. Mbishas nitaweka but from the internet as the end result is the same…but let us keep this bit of the forum working. We all like food.
