Spicy chicken with plantains

My recipe for today is super easy.

  1. Marinate chicken overnight with various spices (Salt, Peri Peri, Spicy chicken, Louisiana Cajun, garlic & herbs and Apple Cider Vinegar.)

  2. Toss the Chicken into the oven on a baking tray. Let it cook for about 15 minutes and then turn to cook for another 10 minutes.

  3. Add the chopped banana plantains coated with salt and Cayenne pepper next to the chicken. Cook for 10 minutes and turn the plantains for another 5 minutes.

  4. Stir fry broccoli with onions and garlic on a pan for about 5 minutes.

  5. Make potatoes and leek soup. Boil potatoes until cooked, add leek, garlic and celery and let them cook together. Add salt to taste and mix. Mash everything together while adding vegetable or chicken stock until it is soupy while cooking. Serve it as is, or sieve it.

Nice, I love fried plantains. I eat loads and never get full.

Indeed, they are delicious. I bake mine though, since I do very little to no frying in my kitchen.

It is sold at Chandarana Food Plus, Carrefour and Healthy U. They go like hot cakes here.
